Summary

How can the practical, convenient, nutritious, and popular characteristics of home-style dishes be fully expressed? To this end, this book introduces step by step the basic knowledge that a novice cook needs to understand and master: commonly used ingredients for stir-frying, common kitchen tools, the initial processing, soaking and expanding, and cutting of various ingredients, as well as useful cooking tips. Before you officially begin cooking, you can already familiarize yourself with all of this through the illustrations, increasing your confidence in learning and operating.

Editor's review

Home-Style Staples systematically maps out the landscape of Chinese staple foods, from basic rice and noodles to more elaborate snacks and flatbreads, covering over 200 home-style preparations. Xia Jinlong, a seasoned culinary educator, sets aside flashy restaurant dishes and focuses on techniques achievable in a home kitchen. The book is especially detailed on key steps such as fermentation, dough kneading, and heat control, with step-by-step illustrations that even noodle-making beginners can follow. Notably, the author incorporates modern nutritional perspectives into traditional recipes, offering healthier adjustments to oil and sugar quantities—a reflection of a pragmatic cooking philosophy. The value of this book lies not only in the breadth of its recipes but also in the cooking logic it conveys: by mastering core skills such as basic dough handling and sauce mixing, readers can extrapolate and create staple variations suited to their own tastes. For modern families seeking kitchen autonomy, this is a reference book worth keeping within easy reach.
